Physical grain/oilseed trading desk setup

We are a professional derivatives trading group specializing in agricultural markets (proprietary trading for our own account exclusively on the financial side). We've been tasked in developing a trading desk for a food company importing large amounts of grains. The company owns physical assets (storage, shipping and trucks) and wants to combine that with participation in derivatives markets in order to expand its physical trading business.

We need to prepare a detailed outline of the processes and procedures of a professional grain trading desk. This desk will be built from the ground up and our group specifically does not have experience on the physical side. We also need to outline how to utilize derivatives from a commercial participants' perspective.
